seitan:
2 cups gluten flour
2 tsp garlic powder
1 tsp ground ginger
1 1/4 cups water or vegetable stock
3 tbsp soy sauce
2 tsp sesame oil

combine dry ingredients in a large bowl. combine liquids and add to dry ingredients. mix vigorously with a fork. when it makes dough (and is somewhat brain-like) knead 10 - 15 times.

let rest 2 - 5 minutes. knead it a few more times. let rest another 15 minutes. you're gonna wanna punch it right in the middle. it's that tempting. don't. or do, i can't imagine you could hurt it, it's gluten.

cut gluten into 6 to 8 pieces and stretch into thin cutlets. simmer in broth for 45 minutes.

broth:
4 cups water
1/4 cup soy sauce
3" piece of seaweed
4 slices ginger (optional - but important)

combine all ingredients in a large saucepan. bring broth to a boil. add cutlets one at a time. reduce heat to barely simmer. seitan may be used, refrigerated, or frozen at this point.
